From Ranch to Resort
Savor fresh, seasonal fare with ingredients sourced locally from The Irvine Ranch, located just eight miles inland from The Resort at Pelican Hill. The Ranch is accessible to Pelican Hill chefs because of the Resort and Ranch’s shared ownership by the Irvine Company. Among the dozens of varieties of Irvine Ranch produce, tomatoes, strawberries and avocados come to your table throughout Southern California’s nearly year-round growing season.
The Resort at Pelican Hill’s coastal location affords excellent accessibility to the freshest seafood and ocean fish selections. Chef Dubray only serves seasonal, sustainable catches and prepares with minimal handling to showcase the ocean flavors.
Executive Pastry Chef Jeff Lehuede creates by hand Pelican Hill’s signature gelatos and sorbet using locally harvested seasonal fruits. Chef Lehuede can also be found creating miniature desserts for special events in his specially designed chocolate room.
