“We always encourage guests to play with their ratios to match their flavor profile, whether that’s sweet, smoky, spicy or bold,” he added. 

 

While there’s plenty to do and see, one tip Minor always shares with planners: Build in unstructured time so attendees can truly enjoy the resort itself. 

 

“Between the infinity pool with Hill Country views, the award-winning golf courses, Mokara Spa and the peaceful walking trails, there’s so much here that allows guests to recharge in their own way,” she said.

Beyond barbecue, groups meeting at Omni Barton Creek Resort & Spa will get a true taste of Hill Country.  

 

In the spring and summer, chefs love highlighting Fredericksburg peaches, Texas sweet corn and fresh herbs from local gardens, Pitts said. Fall brings an abundance of Hill Country apples, winter squash and pecans, which are incorporated into sweet and savory dishes.  

 

“Our menus are often shaped by what’s freshest and most flavorful that week,” Pitts said.  

 

The culinary team works closely with nearby farms to source pasture-raised proteins, and features Texas Wagyu beef, heritage pork and farmstead cheeses on menus. The team has longstanding relationships with local producers like Pedernales Valley Farms, for instance, provides us with heirloom vegetables and microgreens that are bursting with flavor. They also work with Augustus Ranch for their responsibly raised meats, Pitts said. 

 

The resort’s wine program features bottles from William Chris Vineyards and Fall Creek Vineyards, which give guests a taste of Hill Country terroir.  

 

Some standout events that showcase the resort’s culinary chops have included the SMOKE event that brought together eight top barbecue restaurants from across the region for a competition and the Hill Country Harvest Dinner, a multi-course meal with local ingredients paired with Texas wine. 

 

 

For groups, family-style meals rooted in Texas traditions are always a hit, Pitts said.  

 

“There’s something about passing around dishes that break the ice and invite conversation,” he said. “We love preparing smoked brisket with seasonal vegetable sides, or doing a live-fire table presentation where the aromas draw people in.”
